Originally from Portugal, Manuel and his family moved to the famous wine-making region of Chablis in Burgundy in the east of France when he was just a boy.
Manuel’s love for wines began at the tender age of 12, when he worked alongside his father in the vineyards. There, he helped to toil the land, pruning and harvesting grapes, experiences that fostered in him a deep respect for the hard work behind the enjoyment of a fine bottle of wine.
Manuel has accumulated a wealth of knowledge in wine over the past 15 years. He got his start at One Michelin Star Hostellerie des Clos, in Chablis, Burgundy when he was just 16 years old, and then to 2 Michelin Star Le Grand Hotel du Lion D’or in Loire Valley.
Manuel then took up a position as a sommelier at the world’s most luxury hotel, the Burj Al Arab in Dubai in 2006, then he served as an Assistant Head Sommelier at Ossiano, a renowned restaurant opened by 3 Michelin Star Spanish Chef Santi Santamaria at Dubai’s resort development, Atlantis, the Palm.
He moved to Singapore as Chef Sommelier at the St-Regis Hotel where he spent 4 Years.
Manuel came to Japan as Wine Director of the Grand Hyatt Tokyo in 2014 where he worked for over 2 years before opening Sarment Japan in 2016.
Saturday July 18th’ Schedule:
6:15-6:30pm: Welcoming guests with the aperitif
6:30-7pm: Powerpoint presentation on Languedoc-Roussillon wine
7-9:30pm: Dinner time
9:45pm: Ending Time.
10pm: Closing door
