We will introduce 2 renowned wineries and 1 Cidery from New York State’s Finger Lakes.
Ravines Wine Cellars:
Making dry, classical, terroir-driven wines on over 130 acres of estate vineyards. Founded in 2001 and family-owned and operated ever since by Morten and Lisa Hallgren, Morten was raised and trained as an oenologist/winemaker in Provence and Bordeaux France, before moving to the region and pioneering the bone-dry, mineral-tinged Riesling style that the region is now famous for. Ravines utilizes minimal intervention in the cellar and employs sustainable winegrowing practices. Their wines have continually gained noteworthy press and international accolades as a standard-bearer Finger Lakes winery.
Silver Thread Winery:
Owner-winemakers Paul and Shannon Brock represent the new generation of young winemakers
propelling the Finger Lakes region to prominence. At the helm of Silver Thread since 2011, the couple has shepherded the 37-year-old estate winery to new heights with a focus on expressive, terroir-driven Riesling.
Estate vines are farmed bio-intensively, with a holistic, non-chemical approach.
South Hill Cider Company:
Apple hunter, musician, and cider maker, Steve Selin started making cider as a hobby collecting apples and making cider from neglected, forgotten old apple trees from abandoned farms and mountain forests around the Finger Lakes. No chemical fertilizers are used in the orchard and only organic materials are applied

Silver Thread Dry Rosé of Pinot Noir 2021
The elegant soft pink color is reminiscent of a Finger Lakes sunset. Truly dry, crisp, and refreshing. Aromas of graphite and flint, plus strawberries and cream.

This vintage shows tangerine, juicy peach, and flinty notes. An elegant wine with focused minerality and vibrant acidity.

Starter: Duck Confit Salad, Summer Crispy Leaf, Green Apple, Almonds, Citrus-mustard Dressing
New York State wine: Silver Thread – Semi-Dry Reisling 2021
This wine has luscious aromas of pineapple and mango. Intense fruity flavors are well-balanced with
crisp acidity. Round and full flavors with a long, juicy finish.

Main: Braised Beef, Potato Puree, Seasonal Vegetables, Pinot Noir Jus
New York state wine: Ravines Pinot Noir 2019
Delicate ruby in color and a nose that jumps out of the glass- strawberry, savory herbs, cinnamon, bell, pepper, and plum brings about a complexity rarely seen in a Pinot Noir with this light body. There is a great balance of fruit, acidity, and power very apparent on the palate with a potpourri of cranberry, anise, sundried tomato, and rhubarb.

Dessert: Chocolate fondant topped with a vanilla ice cream scoop
South Hill Cider Company Pommeau
An apple liqueur crafted from Apple brandy blended with unfiltered juice during the fermentation
process. During months of aging, it naturally clarifies into an amber liquid of exquisite character.
Golden color, aromas of caramel, honey.

Qualified as an Advanced Sake Professional, I should add Nihonshu to my list of

passionate producers. My energy comes from helping people have fun and assisting
businesses discover new exciting products for their customers.
