The Christmas Buffet:
The French executive Chef of Hilton Tokyo, Martial, partnered with us to create an elegant Christmas Buffet:
Cold Christmas Selection :
Peppered cured Hamachi, gin fizz jelly, pea shoot, olive oil drops and squid ink tuile
Terrine with coeur de foie Gras, port jelly, cornichon and onion pickles
Avocado tartare with crab mayonnaise
Soup: Cream of porcini and mushroom soup, white frothing
Hot Christmas Selection :
Roasted turkey breast, with bacon apple and chestnut stuffing, blow torched carrot and jus
Pan-fried salmon, with sorrel cream sauce, on tagliatelle with spinach drizzle with red wine jus
Roasted parsnip, red onion
Fondant potato
Cheeses selection:
Assorted cheese selection with Blue cheese, brie and Cheddar
Assorted dry fruits and nuts, figs paste, crackers

Tom’s love for wine was first realised on a trip to Germany where he spent time at his distant family’s winery. Upon his return to the USA, he started working in the wine business in Chicago, Illinois. After 4 years in Chicago, Tom decided to move to Australia to study Wine Business at the University of Adelaide.
Tom’s move to Australia allowed him to gain a diverse background including time working in wineries, setting up international distribution networks, marketing and promotion of a vast array of wine brands in Australia as well as in international markets. The move to Australia led to his love of Australian wine and the Australian wine industry.
Tom is the owner of Topé wines and is going to make the wine presentation
