Starter: Cumin Spice-Crusted Chicken Satay with Mango Chutney, Crispy Salad, Grapefruit, Cilantro Yogurt Sauce

Argentinian white wine: Torrontés : a dry white wine from the Vineyards Finca El Retiro, located at 1.650 m (1,413 ft) above sea level in Cafayate Valley, Salta.

Fresh, fruity, tropical: intense with a second aroma of flower along with citric notes. Mouth: fresh, young, fruity. Good structure, is balanced, and an excellent acidity.

Main: Grilled Australian Grap Fed Beef Sirloin, Potato Gratin, Baked Eggplant, Red Wine Sauce and Chimichurri

Argentinian red wine: Malbec from Salta Cafayate Valley in a vineyard at 1.700 m above sea level!

Red fresh fruits such as raspberry, strawberry, and cherry: combined with a spicy aroma due to the oak. Mouth: with a sweet and harmonious entry, balanced acidity, and long and persistence final.

Chilean wine varietals: Gewurtztraminer

Wine consultant

Born and raised in the Cognac region of France, Fabien is a wine consultant with over 15 years of experience in the wine and spirits industry.
He began his career by passing the WSET Advanced Level in London then worked as a sommelier and bar manager before transitioning into a consulting role, he also taught about wine and cheese pairings at the Yokohama French Institute and assured the role of Champagne Brand Ambassador.
Fabien now provides consulting services to restaurants, wine trading companies, wineries, and sake breweries in France and Japan, specializing in designing custom wine trips and experiences.
His passion is sharing his deep knowledge of wines and sake to provide clients with unique and tailored experiences.
Fabien speaks French, English, and Japanese.

フランスのコニャック地方で生まれ育ったファビアンは、ワイン・スピリッツ業界で15年以上の経験を持つワイン・コンサルタント。

ロンドンでWSETの上級レベルに合格してキャリアをスタートさせ、ソムリエやバーのマネージャーとして働いた後、コンサルタント業に転身。また、横浜日仏学院でワインとチーズのペアリングについて教え、シャンパーニュのブランド・アンバサダーも務めた。

現在は、フランスと日本のレストラン、ワイン商社、ワイナリー、酒蔵にコンサルティングサービスを提供し、オーダーメイドのワイン旅行や体験をデザインすることを専門としている。

彼の情熱、それはワインと日本酒に関する深い知識を分かち合い、クライアントに唯一無二の体験を提供することである。

ファビアンはフランス語、英語、日本語を話す。

5:45-6 pm: Welcoming guests with the Chilean aperitif

6-6:30 pm:  Presentation on Argentinian and Chilean wines

6:30-8:30 pm: Chilean & Argentinian Dinner time

9 pm: Closing Doors
