We will introduce an Australian wine vineyard called Brokenwood
Established in 1970, Brokenwood Wines has evolved from a weekend venture for self-professed hobby winemakers into one of Australia’s most reputable wines.
At the heart of Brokenwood lies the belief that everyone should ‘enjoy great wine and have fun’ in a relaxed atmosphere.
The Australian Wine and food pairing:
Aperitif: Bread Roll with Extra Virgin Olive Oil
Australian Wine White: Cricket Pitch 2022
Australian Grape Varieties: Sauvignon Blanc Semillon
Grapefruit, finger lime, and a zesty acidity add to the structure.

Amuse: Pan Seared Hokkaido Sea Scallop
Australian wine white: Semillon Hunter Valley 2021
An outstanding balance with well-adjusted acidity and a dry finish, making it a good match for seafood

Starter: Duck Confit Salad, Dried Cranberry, Almonds, Raspberry Vinaigrette
Australian Wine red: Pinot noir 2019
Structure with ripe tannins and clean, firm acidity. Aromas of red fruits such as fresh cherries.

Main: Grilled Australian Gras Fed Beef Sirloin, Roasted Garlic Potato Puree, Seasonal Vegetables, Red Wine Sauce
Australian Wine Red: Shiraz Hunter Valley 2018
Charming Shiraz. Spicy, gin-heavy, earthy, with a hint of vanilla. Ripe fruit tannins are pleasant, acidity lingers and the finish is long.

Dessert: Apple and Hazelnuts Pie with a vanilla ice cream
Australian Wine dessert: Pink Moscato, semi-sweet

The Wine Expert
Born and raised in the Cognac region of France, Fabien is a wine consultant with over 15 years of experience in the wine and spirits industry.
He began his career by passing the WSET Advanced Level in London then worked as a sommelier and bar manager before transitioning into a consulting role, he also taught about wine and cheese pairings at the Yokohama French Institute and assured the role of Champagne Brand Ambassador.
Fabien now provides consulting services to restaurants, wine trading companies, wineries, and sake breweries in France and Japan, specializing in designing custom wine trips and experiences.
His passion is sharing his deep knowledge of wines and sake to provide clients with unique and tailored experiences.
フランスのコニャック地方で生まれ育ったファビアンは、ワイン・スピリッツ業界で15年以上の経験を持つワイン・コンサルタント。
ロンドンでWSETの上級レベルに合格してキャリアをスタートさせ、ソムリエやバーのマネージャーとして働いた後、コンサルタント業に転身。また、横浜日仏学院でワインとチーズのペアリングについて教え、シャンパーニュのブランド・アンバサダーも務めた。
現在は、フランスと日本のレストラン、ワイン商社、ワイナリー、酒蔵にコンサルティングサービスを提供し、オーダーメイドのワイン旅行や体験をデザインすることを専門としている。
彼の情熱、それはワインと日本酒に関する深い知識を分かち合い、クライアントに唯一無二の体験を提供することである。
Saturday March 23rd Schedule:
5:45-6 pm: Welcoming guests with the Australian aperitif
6-6:30 pm: Presentation on Australian wines
6:30-8:30 pm: Australian Dinner time
9 pm: Closing Doors
Price: 22,980¥ + 12% service tax

3 hours of education, fun, and gourmet time (6 pm-9 pm)
