Description
The Australian Wines and Food Pairing
Aperitif: Bread Roll with Extra Virgin Olive Oil
2024 Skuttlebutt Muscat Blanc á Petit Grains, Margaret River wine, Western Australia
The palate has a vibrant spritz with flavours of citrus, lemonade, and lime. Balanced by the fresh cleansing acidity, which provides freshness and length. Frizzante wine.
~
Amuse: Green Gazpacho, soft smoked scallop
2022 Mac Forbes Yarra Valley: Chardonnay
It has a touch more weight on the palate than previous years, medium bodied with high acidity, crunchy fruits, a little savory sourdough lees quality, and a touch of flinty reduction. A quick decant will allow this to open up in the glass.
~
Starter: Niigata Jidori Chicken and Pork Terrine, Spiced Baba Ghanoush, Jamon Serran & Crispy Salad
2024 Ghost Rock Pinot Noir, Cradle Coast Tasmania
Elegant, soft, dark fruit, spices, touches of turned earth, gravelly tannin profile, dried herbs, liquorice, touches of sea spray, and some smokiness generally.
Quite a good deal of concentration and richness with a stretch of flavour and spice inherent.
Rated: 92 Points
~
Main: Slow-Braised Red Wine Tomato Beef, Prune and Herb Couscous
Bentley Farm, The Stray, 65% Grenache, 35% Shiraz, Borossa Valley
With each variety separately fermented and matured, The Stray displays the level of aromatic and flavour complexity you would expect from a blend of such diverse varietals.
~
Dessert: Chocolate Mud Cake with Whipped Cream
Zinfandel, Orange, New South Wales
Single vineyard, the fruit was handpicked, selected, and hand sorted at harvest. 100% of the grapes were destemmed. basket pressed and delivered straight to 100% French oak barrels. Bottled September 2018
